Balcones brimstone

Aromas of masa, Texas campfire and powdered sugar backed by stone fruit, peppery spice, and mint. It is innovative techniques such as this which are creating a buzz around American whisk(e)y at the moment. Notes of sugar, cold smoked butter, corn husk and stone fruit. On the palate, candied oak, tobacco, orange marmalade and chili peppers.


It’s whiskey that drinks like a meal and I don’t have much to complain about when it comes to its warm and inviting aroma and flavor. A 7ml bottle costs around $8 depending on your market, and can be found online. On the nose, Balcones offers bol complex aromas of chocolate, caramel, toffee, vanilla and coffee, backed by a distinctive note of roasted corn.


Balcones Distilling is based in Waco—just about halfway between Dallas and Austin. Texas is a big state, and they like everything big … big steaks, big trucks, big hats, and big flavors. Balcones is still a small distillery (thank goodness!), but it is filled with big ideas.

Balcones Baby Blue Corn Whisky – Made from roasted blue corn and aged at least months in oak. The nose is immediately funky, mixing notes of petrol, decaying vegetation, and saccharine sweetness. One of the craziest whiskeys I have ever tasted.


Nose: The Balcones powers through, it’s like using a bazooka to crack a walnut. After that initial burst, the zest of the lemon and the sweetness of the maple syrup are there. The nose has notes of sandalwoo linseed oil, and a hint of turpentine with soft clove and a touch of nuttiness. This dark wonder releases an instant charred and smoky nose with an abundance of raisins, stewed plums and molasses brown sugar. Deep and enticing in profile, the palate offers a peppery herbal element, teaming with milk chocolate and smoked ribs.


Whatever the case, don’t hesitate to send them a bottle whether as a token of appreciation or just to prepare for your next big barbecue.
