Ramen broth can be made many different ways, but to keep mine vegan-friendly I went with vegetable broth infused with ginger, onion, garlic and dried shiitake mushrooms (which you can find at most grocery (and all Asian) stores). Making this vegan ramen is pretty easy! All in all, the soup is ready in less than minutes.


STEP 1: Cook the dried shiitake in the vegetable broth for minutes. In another pot, cook the vegan ramen noodles according to the instructions on the package. So by all means, stock up on this vegan ramen brand! Look for the blue Top Ramen packages at your grocery store.
