If you love the natural look of maple, apply a water - based (waterborne) polyurethane. They appear milky in the can, but go on clear and remain clear. Water based poly does not dry the same as oil and will not achieve the same build as an oil based poly. It will shrink wrap itself around the wood grain and so, even after coats, it will still look thin. Water-based poly dries faster than oil, so it’s even harder to brush over a big surface.
