Soy ramen

This past summer, we went to Hokkaido in Japan which is the birth place of Sapporo Miso Ramen. To add more depth and that “umami” flavor, I also added a bit of soy (or tamari) sauce and white miso paste. I learned a few things while making this recipe, and the most important one is about the noodles.


I used fresh yakisoba noodles because I wanted that fresh noodle texture. Shōyu (醤油) is Japanese for soy sauce. An while there are intentional variances in flavor and consistency from brand to bran soy sauce is a fermented brew of roasted wheat and soybeans.

Soy ramen

Complexly flavoure the perfect bowl of ramen combines clear broth with wheat noodles, slices of roasted pork, seasoned bamboo shoots, egg and chopped green onions. To finish off the ramen broth, add soy sauce and wakame to the broth mixture and set aside. Now, cook your soba noodles in a large pot of salted boiling water, and divide between bowls. Top with greens of choice, mushrooms, tofu, green onions and sprinkle with sesame seeds and chilies if you like it spicy.

Soy ramen

Even though this is called shoyu aka soy sauce ramen , most of the flavor actually comes from the bonito, niboshi, and kombu.
